Harapnya bukan cheeseburger kat tempat yg kita wajib boycott tu ye... hehe...
Jom cuba Cheeseburger Cupcakes ni. Begitu mudah untuk buat dan comel sangat!
Guna resipi butter cupcake (atau beli yg adunan dari kotak), pastikan warna dia kekuningan bila masak.
"Daging burger" guna brownies. Boleh cari resipi brownies kat internet.
"Sayur" tu adalah kelapa parut campur dengan pewarna hijau.
"Cheese" adalah icing berwarna kuning dan sos adalah icing berwarna merah.
Taburan kat atas adalah memanik berwarna putih.
Mudah kan?

Ramadhan bakal menjelang tak lama lagi. Dah bersedia ke? -_-
Selalunya bulan puasa ni, persoalan yg sering ada ialah "buka nak makan apa?". Betul tak?
How about cuba resipi ni - Banana Chocolate cupcakes. Yang bestnya ada campur pisang, jadi lebih berkhasiat daripada cupcake yg biasa-biasa je. Anak-anak pasti suka :).
Adunan dia agak cair, tapi jangan risau, ia akan naik dgn cantik. Tak perlu butter atau margerin. Guna minyak sayuran sahaja. Pilih minyak yg tak berbau. Saya guna Canola Oil (Naturel brand). A bit mahal tapi memang guna minyak tu utk masak sbb bagus untuk mengurangkan kolesterol, jadi boleh guna utk buat cupcakes sekali. Jangan guna minyak kelapa sawit yg ada bau seperti Cap Buruh, Knife dan seumpamanya. Nanti tak sedap sbb bau dia kuat...

Banana Chocolate Cupcakes:
1 cup (200
grams) granulated white
sugar
1 cup (130
grams) all-purpose
flour
1/3 cup
(35 grams) unsweetened cocoa powder (regular or Dutch-processed)

baking soda
1/4 teaspoon
salt
1 large
egg
1/2 cup
mashed ripe bananas (about 1 medium sized banana)
1/2 cup (120
ml) warm water
1/4 cup
(60 ml) milk
1/4
cup (60 ml) canola, corn, or vegetable oil
3/4 teaspoon pure vanilla extract
Chocolate Fudge Frosting:
3 ounces (90 grams)
unsweetened chocolate, coarsely chopped
1/2 cup (113 grams)
unsalted butter, room temperature
1 cup (120 grams)
confectioners (powdered or icing) sugar, sifted
1 teaspoon pure
vanilla extract
Cara-cara:
Preheat oven to 350 degrees F (180
degrees C) and place rack in the center of the oven.
Line 12 regular-sized
muffin cups with paper liners or spray each cup with a non stick vegetable spray.
In a large bowl whisk
together the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
In another large bowl,
whisk together the egg, mashed banana, water, milk, oil, and vanilla extract. Add the wet ingredients to the
dry ingredients and stir, or whisk,
until combined. (The batter is quite thin.)
Pour or scoop the batter
into the muffin cups, about 3/4 full, and bake
for about 20
minutes or until a toothpick inserted in the center of a cupcake comes out clean.
Remove from oven and let
cool on a wire rack. Frost with the Chocolate Frosting.
Chocolate
Frosting: Melt the chocolate in a heatproof bowl placed over a
saucepan of simmering water. Remove from heat and let cool to room temperature.
In the bowl of
your electric mixer, or with a hand mixer, beat the butter until smooth and
creamy (about 1 minute). Add the sugar and beat until it is light and fluffy
(about 2 minutes). Beat in the vanilla extract. Add the chocolate and beat on
low speed until incorporated. Increase the speed to medium-high and beat until
frosting is smooth and glossy (about 2 -3 minutes).
Makes 12
regular-sized cupcakes.

Cara membuat Red Velvet Cupcakes & Cream Cheese frostings.
RESIPI RED VELVET (BM)
1 ¼ cawan tepung serba guna
2 sudu besar serbuk koko
½ sudu kecil Baking Powder
½ sudu kecil Baking Soda
¼ sudu kecil Garam
¼ cawan mentega (tanpa garam), lembut pada suhu bilik
¾ cawan gula
¾ cawan Buttermilk
1 telur
1 sudu kecil Vanilla Extract
Pewarna merah utk makanan
Untuk icing/frosting,
2 cawan gula icing
4 oz Cream Cheese, suhu bilik
2 sudu besar mentega tanpa garam, lembut pada suhu bilik
1 sudu besar susu segar
1 sudu teh Vanilla Extract
Cara-caranya
1)Panaskan oven ke 350 degrees. Masukkan cawan cupcake dalam acuan muffin.
2)Di dalam mangkuk kecil, campurkan kelima-lima bahan-bahan paling atas (tepung serba guna, serbuk koko, Baking Powder, Baking Soda, Garam) dan ketepikan.
Putar gula dan mentega di dalam mangkuk lain menggunakan mixer sehingga gebu. Masukkan telur dan vanilla dan campurkan sehingga sekata dan berkrim.
3) Dengan menggunakan mixer perlahan, masukkan separuh bahan kering dan separuh buttermilk, pastikan digaul rata. Lepas tu, masukkan bahan kering yg selebihnya dan buttermilk sehingga adunan rata, tapi jangan terlebih pukul. Guna spatula untuk memastikan adunan di bawah & tepi mangkuk dicampur rata. Masukkan pewarna merah mengikut citarasa anda.
4) Dengan menggunak scoop icecream, masukkan adunan dalam loyang dan bakar 18-22 minit atau apabila dicucuk dengan pencungkil gigi, ianya bersih. Biarkan sejuk.
5) Untuk membuat icing, masukkan semua bahan icing dalam mangkuk mixer dan pukul sehingga rata dan pekat. Hiaskan cupcake anda.
6) Biarkan sejuk dalam peti sejuk selama 10-15 minutes agar icing tersebut keras sedikit.

Makes 11 to 12
1 ¼ cup of all Purpose Flour
2 Tbsp of Cocoa Powder
½ tsp of Baking Powder
½ tsp of Baking Soda
¼ tsp of Salt
¼ cup of Unsalted Butter, softened at room temperature
¾ cup of Granulated sugar
¾ cup of Buttermilk
1 Egg
1 tsp of Vanilla Extract
Red food Coloring
For the frosting,
2 Cups of Powdered Sugar
4 oz of Cream Cheese, softened at room temperature
2 Tbsp of Unsalted Butter, softened at room temperature
1 Tbsp of Milk
1 tsp of Vanilla Extract
Preparation,
1) Preheat your oven to 350 degrees. Line a muffin pan with cup cake liners and set aside.
2) In a small bowl mix together the first 5 ingredients and set aside.In the bowl of an electric mixer fitted with a paddle attachment, cream together the sugar and butter, add the egg and vanilla and mix until well combined and creamy.
3) With the mixer running on low, add half of the dry ingredients and half of the buttermilk, make sure its combined and add the remaining dry ingredients and buttermilk making sure to combine everything together but not over mixing.Using a spatula mix the batter from the bottom to make sure nothing is left stuck to the side of the bowl, add enough food coloring to get the desired red color for your cupcakes.
4) Using a large ice cream scoop, scoop the batter evenly in your prepared pan and bake for 18 to 22 minutes or until when you insert a toothpick in the center it comes out clean.Let the cupcakes cool completely.
5) To make the frosting simply put all the frosting ingredients into the bowl of an electric mixer and mix until well combined and it has the consistency of a thick frosting.Frost the cupcakes either with a little spatula or using a disposable piping bag fitted with a plain large tip.
6) Let cool in the fridge for about 10 to 15 minutes to set a little before serving (if you can resist them anyway)

Cheesy Cupcakes

Bahan-bahan ( 12-15 biji )
- 200 g tepung gandum (2 cwn rata dan keluarkan 4 sb )
- 150 g mentega lembut (15 sb rata atau 1/2 buku mentega+ 2 sb rata)
- 150 g gula kastor/halus (15 sb rata)
- 2 biji telur - dikocok
- 2 sk baking powder
- 60 g cream cheese
Cara-cara
- Ayak tepung dan baking powder dan ketepikan.
- Pukul mentega dan gula hingga kembang lalu masukkan telur sedikit2 sambil dipukul terus.
- Masukkan pula campuran tepung sedikit2 sambil dikacau dengan senduk hingga rata.
- Sediakan mangkuk kertas beralas acuan dan isi adunan kek 1/2 penuh,isi 1/2 sudu kecil cream cheese dan tutup lagi dgn adunan kek.
- Bakar dalam oven yg telah dipanaskan dulu selama 20-30 min. pada suhu 180C atau ikut kepanasan suhu oven masing2.
- **Cream cheese boleh jugak diganti cheddar cheese atau cheese slice yg dipotong kecil,ikut selera.

Resipi Cupcake Vanilla (BM)
1/3 cawan mentega atau margerin, dilembutkan.
2/3 cawan gula
½ sudu teh baking powder.
½ sudu teh baking soda.
1 biji telur.
1 sudu teh vanilla.
1/3 cawan yoghurt tanpa perisa.
1/3 cawan susu segar.
1 1/3 cawan tepung gandum
CARA:
Panaskan oven 350°F (175°C).
Masukkan 12 keping alas cupcake dalam loyang
Di dalam mangkuk sederhana besar, pukul mentega dan gula hingga rata.
Masukkan baking powder dan baking soda ke dalam adunan dan pukul sehingga berwarna pucat (selama 1 minit)
Masukkan telur dan esen vanilla dan pukul sehingga kembang.
Campurkan vanilla yoghurt dan susu dalam mangkuk yang lain.
Dengan menggunakan mixer pada kelajuan yang rendah, pukul yoghurt dan susu bersama adunan mentega tadi. Adunan menjadi seakan dadih. Campurkan pula tepung sehingga adunan rata.
Masukkan ke dalam loyang.
Masak 15-20 minit atau bila atas kek berwarna perang keemasan atau bila pencugkil gigi yang dicucuk pada tengah kek keluar dengan bersih.

1/2 sudu teh baking soda
3/4 cawan air
SUHU OVEN ~ 350° MASA MEMASAK ~ 19 - 21 Min.
JENIS PAN ~ 12 tin muffin pan
CARA:
1) Panaskan oven
2) Masukkan coklat masakan dan mentega ke dalam satu mangkuk dan panaskan dalam Microwave oven selama 2 minit (suhu HIGH) atau sehingga mentega cair.
3) Kacau sehingga coklat cair sepenuhnya.
4) Masukkan gula dan vanila. Kacau rata.
5) Masukkan telur, satu per satu. Pukul dengan mixer electrik pada kelajuan perlahan setiap kali sehingga sebati dengan baik.
